Tomato Thief

Making dinner is hard with a toddler. Especially when it’s their “witching hour”. All Emily wants is your attention. Sometimes I will resort to “Clifford” on the dvr but today I thought I’d try play-doh. It worked for a while before she got bored and decided to move on. Sure, I need to incorporate her in meal making more but right now it’s just easier this way.

Anytime the refrigerator opens, Emily is there. Usually trying to climb in for a gummy bear. This evening, I was reaching in to get the vegetables for our salad. I had the lettuce, green peppers and Roma tomatoes. I had the tomatoes. Until Emily snatched one. She started eating it like an apple! Did I mention that she loves tomatoes? Now hopefully, I’ll be able to get the juice out of her shirt!

By the way, she ate the entire thing and was looking for more. I guess I better watch out when I open the door- it might not be the gummy bears she is after!

Vegetable Beef Soup


My way. I had an idea of how I wanted the soup to turn out but I couldn’t find an exact recipe. So I made my own! Emily and Stephen loved it and it was very filling!

Vegetable Beef Soup

2 cans beef broth
4 cups of water
2 beef bullion cubes
1/2 lb – 1 lb sirloin- cubed and cooked
1 small zucchini, diced
1 small yellow squash, diced
1 russet potato,  diced
1 sweet potato, peeled and diced
1 small bag of mixed vegetables
1 can diced tomatoes, I used a mexican flavor to give it some zip
a dash of dried basil leaves
a dash of thyme

I put all ingredients in the crockpot and cooked on low for several hours.
